Instructions

Prepare the Ingredients

Add all ingredients to a cocktail shaker. Add egg whites first, or separate white and yolk over another container to avoid accidently getting yolk in the mix. Don’t add ice yet.

Dry Shake

Shake vigorously, without ice, for at least 10 seconds to emulsify the egg whites, creating a frothy texture.

Shake with Ice

Add ice to the shaker and shake again for another 15 seconds to chill and incorporate the ingredients, add dilution, and further develop the frothy texture.

Strain and Serve

Double strain the cocktail into a chilled coupe glass, or other elegant, stemmed glassware, to remove any ice shards and ensure a smooth texture. The Clover Club should have a creamy, frothy top layer.

Garnish and Enjoy

The traditional garnish for this cocktail is 3 raspberries on a cocktail skewer, but a twist of lemon peel can also work. Serve immediately to preserve the rich, frothy texture and while it’s still icy cold, since it’s served up and not on ice.
